7 Minute Breakfast Sandwich


7 minute breakfast sandwich… This morning I felt like changing things up. Normally I eat a Greek yogurt with either Kashi or a blend of fiber cereal and flax seeds, but today I decided to make a breakfast sando to take to work. Having grabbed egg whites, turkey bacon, and some whole wheat flat breads from TJ’s this weekend, I decided that I might as well add in some veggies while I’m at it and use some of the spinach and shaved broccoli that I bought for dinner.

On the Menu:
Egg white & veggie scramble, with turkey bacon and organic ketchup on a whole wheat flat bread.

The scramble:
Start by putting a little olive oil or non-stick spray in a small pan on high heat. Add a small handful of whatever chopped veggies you’ve got around. For me it was spinach and shaved broccoli. Let them sauté for just a minute or two until they are hot and slightly wilted. Then pour in your egg whites, no exact amount here, just eyeball how much you think you’ll want on your sandwich. Of course you can substitute regular eggs instead of just the whites if you prefer. Add a bit of cracked black pepper and scramble the eggs and veggies until fully cooked, about 2 minutes.




The turkey bacon:
While your eggs are cooking put two slices of  turkey bacon on a plate and cover it with a  paper towel. Put it in the microwave for 40-60 seconds and voila!




The Sando:
Toast the whole wheat flats for a crispy exterior, or leave them soft if you prefer. Cut the turkey bacon slices in half and put 2 pieces on each side of the bread. Spread some organic ketchup on one side and put your fluffy scramble on the other. Put the two sides together and there you’ve got an easy, healthy, Dahlicious breakfast sando to go. I wrapped mine in aluminum foil to take to work, but you can surely enjoy this at home as well!




This literally took me approximately 7 minutes to make, which is a small price to pay for a healthy and satiating breakfast on the go.
